Bulalo is one of the Philippines' most beloved beef soups, made from beef shanks and marrow bones slow-cooked until the collagen-rich broth turns milky and the marrow can be scooped directly from the bone. It originates from Batangas and is a staple comfort food, often served with vegetables and patis (fish sauce).
