Aligi is the yellowish-orange fat or roe found inside a crab's shell, considered a delicacy in Filipino cuisine. It is prized for its rich, creamy flavor and is a key ingredient in dishes like 'tahong' sauce and various crab recipes. It is also used as a spread on rice.
